Today, I picked up our Bountiful Baskets order, and I have to say that the organic baskets were wonderful this week. We received broccoli, cauliflower, cherries, mangoes, donut peaches, mushrooms, corn, purple kale, baby bok choy, celery, and cantaloupe. I also got a box of pineapple. What do you do when you have some extra blueberry and cranberries that need to be used up? Well, I decided to create a raw sauce for our pan grilled skinless, boneless chicken breasts. After eating it, both D and I decided that it would also taste great on ice cream, so we used some of the leftover sauce on some homemade vanilla blender ice cream later that evening. Yum! We thought it would be fun to try latkes which are a traditional Hanukkah food. Seeing how I like to tweak recipes slightly and I had sweet potatoes on hand, I decided to do a mixture of regular fingerling potatoes and sweet potatoes. As we were preparing our Thanksgiving menu, I thought I would try out a new sauce for the turkey rather than just having the traditional gravy.
