Today, I picked up our Bountiful Baskets order, and I have to say that the organic baskets were wonderful this week. We received broccoli, cauliflower, cherries, mangoes, donut peaches, mushrooms, corn, purple kale, baby bok choy, celery, and cantaloupe. I also got a box of pineapple. The pineapple, mangoes, and peaches aren’t ripe yet, so that will give us a chance to really dig into all the other yummy fruits.
Because I really want to take advantage of all of the yummy goodies this week, I decided to make some roasted cauliflower and broccoli for lunch. It’s been some time since I’ve made it, so it was a bit of a trial run. It turned out well, and it was filling which is a plus.
Ingredients:
- 1 head of cauliflower
- 2 heads of broccoli
- 3-4 Tbsp. olive oil
- salt
- pepper
- garlic powder
- shredded Parmesan cheese
Directions:
- Preheat oven to 375 degrees.
- Break apart the cauliflower and broccoli heads (make sure you’ve washed them well) and place in a large baking dish.
- Drizzle cauliflower and broccoli with olive oil.
- Sprinkle with freshly ground sea salt and black pepper according to your taste.
- If you have fresh garlic, you can use it. I didn’t have any on hand, so I just sprinkled lightly with garlic powder.
- Bake for 25-30 minutes until veggies are fork tender.
- Remove from oven and sprinkle with Parmesan cheese.
- Serve immediately.

- Remove from oven and sprinkle with Parmesan cheese.
