Oven Roasted Chicken Breast with Herb Butter and Veggies Recipe

Ingredients:

  • 1 boneless, skinless chicken breast for each person
  • 1 cup of veggies per person
  • 2 Tbsp softened butter
  • Herbs

Directions:

  1. Preheat cast iron skillet on medium-high. Preheat oven to 350○ F.
  2. Season the chicken breasts (salt & pepper or favorite seasoning blend) and sear the chicken breasts on both sides.
  3. Place chicken breasts in oven for 20 minutes or until internal temperature reaches 165○ F
  4. Cook veggies
  5. While you are allowing chicken breasts to rest, make the herb butter. Mix in a sprinkle of your favorite herbs into the softened butter. (I use dill, parsley, and garlic powder.)
  6. Place herb butter on chicken breasts. Slice chicken breasts right before to serving.
