Oven Roasted Chicken Breast with Herb Butter and Veggies Recipe
Ingredients:
- 1 boneless, skinless chicken breast for each person
- 1 cup of veggies per person
- 2 Tbsp softened butter
- Herbs
Directions:
- Preheat cast iron skillet on medium-high. Preheat oven to 350○ F.
- Season the chicken breasts (salt & pepper or favorite seasoning blend) and sear the chicken breasts on both sides.
- Place chicken breasts in oven for 20 minutes or until internal temperature reaches 165○ F
- Cook veggies
- While you are allowing chicken breasts to rest, make the herb butter. Mix in a sprinkle of your favorite herbs into the softened butter. (I use dill, parsley, and garlic powder.)
- Place herb butter on chicken breasts. Slice chicken breasts right before to serving.

This is a great technique and a cast iron skillet is perfect. I’ve also used a similar technique for leg quarters. You can have infinite variety with the compound butter. Great recipe!
