Little did we know at this time last year that D would be going through two back surgeries in one year. I don’t think any of us really understood how much this would impact our lives. Yes, we knew there would be changes, but the extent of the changes weren’t really grasp until we were actually in the trenches going through the process. Oven Roasted Chicken Breast with Herb Butter and Veggies Recipe Ingredients: 1 boneless, skinless chicken breast for each person 1 cup of veggies per person 2 Tbsp softened butter Herbs Directions: Preheat cast iron skillet on medium-high.
