Favorite Ingredient Friday: Chicken Popovers

Now these aren’t truly popovers, but it’s what we’ve always called them. This is something that I came up with when my husband and I were first married, and they were a hit.

Ingredients:

2 Chicken breasts (once again, you can use your favorite cut)
2 pats of butter
Italian seasoning
Salt
Pepper

Directions:

1. Place the chicken breasts between 2 sheets of plastic wrap and pound thin.
2. Divide each chicken breast into 2 halves.
3. Place pat of butter inside of chicken breast and sprinkle with italian seasoning
4. Fold edges of chicken into the middle to cover pat of butter and seasoning.
5. Place chicken, rough edge side down into greased muffin tins.
6. Spray with Pam (or brush with melted butter), sprinkle with salt/pepper/seasoning to taste
7. Place in 375 degree oven for about 30 minutes (until cooked through) **I’ve noticed that cooking time can vary greatly depending on how thin the chicken was pounded and different ovens, so the best thing to do is have an in-oven meat thermometer and set it for 180 degrees**

Once again, a very simple, but delicious dish.
