We thought it would be fun to try latkes which are a traditional Hanukkah food. Seeing how I like to tweak recipes slightly and I had sweet potatoes on hand, I decided to do a mixture of regular fingerling potatoes and sweet potatoes. The result was delicious and more nutritious than a latke made with just regular potatoes.
Ingredients:
- 6 fingerling potatoes, washed & peeled
- 2 small sweet potatoes, washed & peeled
- 1/2 medium sweet onion, diced
- 1/4 tsp garlic powder
- 1/2 tsp sea salt
- freshly ground pepper
- 2 large eggs
- 1/4 c potato flour
- 1/4 c coconut oil
Directions:
- Grate potatoes. Place grated potatoes in a bowl of cold water to soak for a few minutes. Drain well.
- Place well drained potatoes and onions in a bowl and mix. Add in the egg, seasoning, and flour. Mix until thoroughly combined.
- Heat 1/4 cup oil in a cast iron skillet over medium heat until oil is hot.
- Using 2-3 Tbsp of the potato mixture, create round patties. Carefully place patties (4 at a time) in the hot oil.
- Cook until undersides are browned, about 3-5 minutes. Turn latkes over and cook until undersides are browned, about 3-5 minutes more.
- Transfer to paper towels to drain and season with salt, if desired.
- Continue cooking until all latkes are made. Add more oil to skillet as needed.
- Serve with sour cream or applesauce.
