One night this past week, I needed something quick and easy to make for dinner. I checked in the pantry and fridge to see what I had available. I came up with these tacos, and they ended up being such a huge hit that they were requested again the next day. You could easy add more veggies of your choice.

Gluten Free Veggie Taco Recipe
Ingredients:
- Guacamole (I used Wholly Guacamole)
- Refried Beans (vegetarian version)
- Sour Cream
- Lettuce (shredded)
- Tomatoes (diced)
- White Corn Tortillas
- Cheese (optional)
- Other veggies (finely diced, optional)
Directions:
- Heat up skillet to medium/medium-high (I used cast iron skillet). Spray pan if needed.
- Once skillet is hot, toss on tortilla until warmed through and slightly crisp on the outside. (Do not over cook as they’ll get too crisp to fold.) During cooking the tortilla will puff slightly creating little bubbles in the tortilla.
- Repeat with remaining tortillas.
- As the tortillas come off the skillet, start filling them with the beans, guacamole, sour cream, lettuce, tomatoes, other veggies (if desired), and cheese (if desired).
- Serve immediately for best flavor.
Very simple recipe that packs lots of flavor and can be packed with delicious, nutritious veggies.
