Chicken with Cranberry Blueberry Sauce

Cranberry Blueberry Chicken

What do you do when you have some extra blueberry and cranberries that need to be used up? Well, I decided to create a raw sauce for our pan grilled skinless, boneless chicken breasts. After eating it, both D and I decided that it would also taste great on ice cream, so we used some of the leftover sauce on some homemade vanilla blender ice cream later that evening. Yum! These are all rough ingredients as a great deal will depend on your desired sweetness/tartness. I just put together what I needed to use up.

Ingredients:

  • 1/2 cup blueberries
  • 3 cups cranberries
  • 1/2 cup orange juice
  • 2 Tbsp honey (make adjustments according to your taste)
  • 1 grilled boneless, skinless chicken breast per person

Directions:

  1. In blender, combine cranberries, blueberries, orange juice, and honey.
  2. Pulse until the sauce reaches your desired consistency. Taste and add more honey if needed.
  3. Spoon over grilled chicken breasts.

Notes:

  • This sauce tastes yummy over vanilla ice cream.
  • It would also taste good over other meats.
  • Make up a nice tropical salad (as shown in picture above) and add a little of this sauce.
