Romanesco – The Alien Vegetable

Posted in Gluten Free, and Homemaking

Our organic Bountiful Baskets order for 3/2/13 was filled with all kinds of goodies this week including Romanesco, Leaf Lettuce, Baby Broccoli, Cilantro, Celery, Red Potatoes, Red Swiss Chard, Bananas, Apples, Mangoes, Grapefruit, and Blueberries. Now, I’ve never cooked Romanesco, but I read that is was kind of like cauliflower, so I started throwing together a variety of items from the basket this week as well as a few leftovers from last week. I used the red potatoes, brussels sprouts, garlic, Romanesco to create a very healthy dish. The creation looked quite green, but it tasted delicious. Romanesco is rich…

Sauteed Brussels Sprouts

Posted in Gluten Free, and Homemaking

We received a bunch of fresh, organic Brussels Sprouts in our Bountiful Baskets order on Saturday, so I needed to come up with a tasty way to use them. Me? I love Brussels Sprouts. Munchkin doesn’t like them at all. D pretty much only likes them when they are roasted, but he’s still not a huge fan. I decided to do something a little different with them rather than halving them and roasting them. I started out by cutting the base off the sprouts and then removing the outer leaves. After they were washed, I sliced them instead of cutting…

Roasted Fennel

Posted in Gluten Free, and Homemaking

In this week’s organic Bountiful Baskets order, we received fennel. I’ve never actually cooked fennel, so I decided to go with a simple roasting preparation. Munchkin wasn’t overly fond of the texture, but she liked the flavor. For her, I would probably slice the fennel a little thinner which would help with the texture aspect that she didn’t enjoy. I served the fennel with a chicken breast seasoned with salt & pepper and then sauteed in a vidalia onion sauce. Roasted Fennel Recipe Ingredients: Fennel bulb sliced into at least 8 wedges salt pepper olive oil Parmesan cheese (grated or…

Gluten Free Apple and Onion Stuffing

Posted in Gluten Free, and Homemaking

Being gluten free at Thanksgiving means that you either need to stick with naturally gluten free items or you need to do a little more planning. Since my family likes to stick with traditional Thanksgiving food, I need to plan ahead a little more when it comes to our stuffing. The preparation begins a couple of days prior to Thanksgiving since I need to make the gluten free bread and allow it to “stale” a little prior to making it into stuffing. Gluten Free Apple and Onion Stuffing Recipe Ingredients 1 stick butter 5-6 small carrots, diced 4 ribs celery,…

Roasted Baby Bok Choy

Posted in Gluten Free, and Homemaking

As you can see, I’m working my way through our Bountiful Baskets veggies. I had never cooked or eaten baby bok choy, so I wasn’t sure what exactly to do with it. (Sometimes these baskets make me feel like I’m on the Food Network show Chopped. You never know what you’re going to get. lol!) Many of the recipes that I was seeing online were for steamed bok choy, but I really wanted to try something different. I decided that I would try roasting the baby bok choy. The result was quite yummy. Once again, I was working with ingredients…
