One of the Thanksgiving staples that I’ve had the most difficulty replacing would be good old fashioned herb stuffing/dressing (think a better stove top dressing.)  After many different trial and error sessions over the last couple of years, I’ve finally been able to create a delicious replacement.  We cook our stuffing outside of the bird, so I guess it’s technically called dressing. My mom use to make this no-cook cranberry relish for us.  I never did find her old recipe, so I just recreated it from memory.  We do have a funny story to go along with this one.  When my sister and I were younger, my mom decided to allow us to help with making the cranberry relish.  She had one of the old grinders that you fastened to a table.  We started putting the ingredients into the grinder and turning the handle.  I’m not exactly sure what happened next, but before we knew it, there was cranberry relish all over…

Gluten Free Fried Cheese Sticks Ingredients: Spring Roll Wrappers (make sure they are gluten free) Sticks of Cheese (I used mozzarella) Seasoning (if desired) Directions: Heat up oil to around 360 degrees (I use a deep fryer with palm shortening) Soak spring roll wrappers in water to soften. Cut cheese in sticks if not already cut. Place spring roll wrapper on plate and sprinkle with seasoning (if desired, I use oregano & garlic powder). Cranberry Salad A friend of our family brought us over some of this cranberry salad after my surgery.  It was one of the things that sat well with my stomach.  I really enjoyed it and asked for the recipe.  While this is normally made for the holidays, it would be great any time of the year.  It’s one of those classic potluck dishes.  I modified the original recipe just slightly. Tonight I tried my hand at homemade salsa, and even Munchkin liked it. So, it was obviously a hit at our house. It’s really simple. Ingredients: 1 Half Large Sweet Onion 6 Roma Tomatoes 1 Green Pepper 1 Half Red Pepper 1 Half Yellow Pepper 1 Medium Cucumber 3 Tbsp Lemon Juice You can either finely chop everything by hand or you can use a chopper to dice everything.
