D decided that he’d really like to have some cheesecake, so I threw together this quick no-bake version for him. I simply used a package of broken gluten free arrowroot cookies that crumbled in the blender and some melted butter to create the crust. I then whipped together a cup of heavy whipping cream, a block of softened cream cheese, 1/3 to 1/2 cup of powdered sugar, 2 Tbsp maraschino cherry syrup (out of jar or homemade), and 1 tsp pure vanilla extract to create the cheesecake filling.
