Gluten Free Cherry Cheesecake

Cherry Cheesecake

D decided that he’d really like to have some cheesecake, so I threw together this quick no-bake version for him.  I simply used a package of broken gluten free arrowroot cookies that crumbled in the blender and some melted butter to create the crust.  I then whipped together a cup of heavy whipping cream, a block of softened cream cheese, 1/3 to 1/2 cup of powdered sugar, 2 Tbsp maraschino cherry syrup (out of jar or homemade), and 1 tsp pure vanilla extract to create the cheesecake filling.  I topped the cheesecake with mini chocolate chips and maraschino cherries before placing in the fridge to set.

The cheesecake had a very light cherry flavor which both D and Munchkin enjoyed.  Munchkin says that she wishes they would have been regular cherries, and I agree that the flavor would have been better with fresh cherries.  I just used what I had on hand.  Even though we all agreed that fresh cherries would have been better, the cheesecake was enjoyed and quickly polished off.
