I decided that I wanted a slightly different cake for my birthday. Cheesecake sounded good, but a regular cake also sounded good. I thought it would be tasty to combine the two.
I started off with a gluten free Betty Crocker devil’s food cake mix and baked it as normal in a round cake pan. While the cake cooled, I made up a modified cream cheese frosting. Since I wanted it to be more like cheesecake, I did not make it as sweet.
“Cheesecake” Frosting
- 1 stick butter (salted)
- 1 block cream cheese
- 1 cup powered sugar
- 1/2 cup heavy whipping cream
- 1 tsp vanilla
Directions:
- Cream together butter and cream cheese.
- Mix in vanilla and heavy whipping cream
- Beat in powered sugar until thoroughly combined
After the cake was cooled, I cut it in half to create two layers for the cake. Place a thin layer of the frosting on the bottom layer. Add some of the cherry pie filling. Top with the other layer of cake. Using a piping bag, pipe the frosting around the top edge of the cake to create a “mote” for the rest of the cherry pie filling. For fun, I made a decorative flower in the middle of the cake on top of the cherry pie filling and topped with a single cherry.
We’re thoroughly enjoying this cake. The bitterness of the dark chocolate with the cherry pie filling combined with the “cheesecake” frosting is a nice dessert that isn’t overly sweet.
