Support Our Troops

Back in August, Alycia wrote about an opportunity to support our troops by making blankets for single Marines returning from Iraq. Since they’re returning in the same time frame that my hubby is leaving, I thought this would be a wonderful thing for Munchkin and I to do to show our support. Well, we bought our material way back in August, but with everything going on around the homefront, we just made the blanket last week. Yikes! The main thing is that Munchkin and I worked together and got it finished. Here’s how it turned out:

Gluten Free Baked Donuts

Ingredients: 2 C gluten free rice flour mix 1 tsp xanthan gum1 C sugar2 tsp baking powder1/2 tsp salt (mix together dry ingredients and set aside) 1 tsp vanilla extract1 Tbsp shortening, melted (or oil)3/4 C milk2 eggs (combine thoroughly) Directions: 1. Add dry ingredients into wet ingredients.2. Lightly spray donut trays with non-stick spray.3. Pour mixture into pans so they are about 3/4 filled4. Place in pre-heated 325 degree oven for 15 minutes (until toothpick comes out clean)5. All Purpose GF Rice Flour Mix

Here is a great gluten free rice flour mix that you can usually use in place of all purpose flour. You will also need to add 1/2 tsp of xanthan gum per cup for cakes and 1 tsp xanthan gum for breads. I made this up ahead of time (minus xanthan gum) and keep it in an air tight container. 3 C White Rice Flour3 C Brown Rice Flour2 C Potato Starch (not flour)1 C Tapioca Starch

Today’s tackle is a different sort of tackle for us. The tackle all stems from our studies today and some reading that Munchkin has been doing… Our first tackle was running to the grocery store to get the ingredients that she needed to make her new recipes from the Incredible Edible Gluten Free Food for Kids book that she’s reading. Yummy, yummy. It’s time for the Appetizer & Snacks Edition of Favorite Ingredients Friday. Now, we love snackage around this house, so finding a recipe to share really isn’t that difficult. I can’t wait to read the other recipes as well as I’m always looking for yummy new snacks. Since we’re gluten-free around here, I’ve changed some of our favorite recipes into gluten free recipes.
