Here is a great gluten free rice flour mix that you can usually use in place of all purpose flour. You will also need to add 1/2 tsp of xanthan gum per cup for cakes and 1 tsp xanthan gum for breads. I made this up ahead of time (minus xanthan gum) and keep it in an air tight container.
3 C White Rice Flour
3 C Brown Rice Flour
2 C Potato Starch (not flour)
1 C Tapioca Starch
