Gluten Free Baked Donuts

Ingredients:

2 C gluten free rice flour mix
1 tsp xanthan gum
1 C sugar
2 tsp baking powder
1/2 tsp salt

(mix together dry ingredients and set aside)

1 tsp vanilla extract
1 Tbsp shortening, melted (or oil)
3/4 C milk
2 eggs

(combine thoroughly)

Directions:

1. Add dry ingredients into wet ingredients.
2. Lightly spray donut trays with non-stick spray.
3. Pour mixture into pans so they are about 3/4 filled
4. Place in pre-heated 325 degree oven for 15 minutes (until toothpick comes out clean)
5. Remove from oven and allow to cool.

***These are great with a glaze, powdered sugar, cinnamon sugar, or dipped in melted chocolate***

Now, that I have a good cake donut recipe, I’ll probably try different variations like pumpkin spice, apple cinnamon, and blueberry. Yummy!

    I know this is okd, so HOPEFULLY you get this – if not, I will email you.

    You said in the all purpose recipe you need to add xanthum gum. And this recipe has xanthum gam added. Is that what you are supposed to add to the all purpose flour or that IN ADDITION to what you are supposed to add to the all purpose flour.

    Why do you not add xanthum gum to the all purpose mix and how do you store your gum? THANKS SO MUCH!!! 🙂

    I am really looking forward to giving these a try for my hubby. He found some in the store, but they are pretty pricey. Thanks for sharing!
