Gluten Free Flax Bread

As sandwiches and toast are a big part of our daily diet, I needed to find an alternative that was gluten-free. We didn’t want to sacrifice texture and flavor. This recipe found over at recipezaar fit the bill. I decided to put it in the bread machine at the gluten-free setting instead of baking it in the oven. It turned out wonderfully.

1 1/4 C gluten-free flour
1/4 C garfava flour
1/2 C potato starch
1/4 C cornstarch
1/4 C flax seed meal
2 1/2 tsp xantham gum
2 tsp active dry yeast
1 tsp salt
2 eggs
2 egg whites
1 C water or milk
2 Tbsp vegetable oil
2 Tbsp honey (or brown sugar)
2 tsp vinegar

Directions:
1. Combine flours, flax, starches, gum, yeast, salt.
2. In different bowl, combine wet ingredients, then add dry.
3. Scrape the sides, and mix on medium for 4-5 minutes
4. Pour into 9X5 pan, and let rise to top of pan.
5. Bake at 350 degrees for about 40 minutes.
6. Remove from pan, cool, and slice.

***My bread machine version…. I combined the wet ingredients in one bowl (making sure the eggs are at room temp and the water/milk is warm) and the dry ingredients (minus the yeast) in another bowl. I poured the wet ingredients into the bread machine pan followed by the dry ingredients. I placed the yeast on top of the dry ingredients. I set the machine to the gluten-free cycle. During the mixing, I scraped down the sides once or twice. I then smoothed out the dough before the final rise.***

***Another variation is adding cinnamon and raisins for a delicious morning bread.***
