****Please note: Oats are gluten free, but some people with gluten problems are sensitive to oat products.****
Ingredients:
3/4 C butter, softened
3/4 C white sugar
3/4 C packed light brown sugar
2 eggs
1 tsp vanilla extract
1 1/4 gluten free flour
1 tsp
3/4 tsp cinnamon
1/2 tsp salt
2 3/4 C rolled oats
1 C raisins
Directions:
1. Preheat oven to 375 degrees F.
2. In large bowl, cream together butter, white sugar, and brown sugar until smooth
3. Beat in eggs and vanilla until fluffy
4. In different bowl, stir together flour, baking soda, cinnamon, and salt
5. Gradually beat in dry ingredients into butter mixture
6. Stir in oats and raisins
7. Drop by teaspoonfuls onto ungreased cookie sheet
8. Bake 8-10 minutes until golden brown
9. Cool slightly; place on wire cooling rack
10. Cool completely

Toni, we have no official diagnosis, but we know that there is a gluten intolerance.
