GF Breakfast Bars

As you can see, this was a big hit with D. I needed a different idea for something for breakfast. I decided to use a play off of baked oatmeal. I used the Bob’s Red Mill Mighty Tasty GF Hot Cereal instead of oatmeal.

Ingredients:

1/2 C butter, melted
1 C brown sugar
3 C Mighty Tasty GF Hot Cereal (or oatmeal)
1 1/2 C milk w/2 tsp lemon juice (or yogurt or buttermilk)
1 tsp cinnamon
2 eggs, beaten
2 tsp baking powder
1 tsp salt
Optional: raisins, nuts, chopped apples…

Directions:
1. Mix the ingredients together (sprinkle with cinnamon sugar, raisins, nuts…)
2. Bake in a greased 11X7 baking pan at 350 degrees (I used stoneware instead)
3. Top with honey for a delicious breakfast
