Gluten Free Fried Cheese Sticks Ingredients: Spring Roll Wrappers (make sure they are gluten free) Sticks of Cheese (I used mozzarella) Seasoning (if desired) Directions: Heat up oil to around 360 degrees (I use a deep fryer with palm shortening) Soak spring roll wrappers in water to soften. Grapefruit & Prickly Pear Roast Chicken Ingredients: 3 large boneless, skinless chicken breasts 1/2 tsp minced garlic 2 Tbsp Prickly Pear sauce 1 large grapefruit, juiced Directions: Combine grapefruit juice, prickly pear sauce, and minced garlic. Place chicken breasts in a baking dish.  Pour sauce over chicken breasts. Cover with plastic wrap and refrigerate for a few hours. Cheese Quiche with Hash Brown Crust Ingredients: 3 C shredded hash browns 1 Tbsp butter, melted 1 cup grated cheddar cheese 3 eggs ¾ cup cream ¾ cup cottage cheese 1 tablespoon potato flour 2 teaspoons spicy mustard ¼ teaspoon minced onion ½ teaspoon sea salt ¼ teaspoon black pepper 4 tablespoon grated Parmesan cheese Directions: Preheat oven to 400 degrees F.  Grease pie pan. This is the gluten free flour blend that I currently use in my baking: 1 C Brown Rice Flour 1 C Sorghum Flour 1 C Amaranth Flour 3 3/4 C White Rice Flour 2 1/4 C Sweet Rice Flour 2 C Tapioca Starch 3/4 C Potato Starch 3/4 C Corn Starch 6 tsp Xanthan Gum I usually make up a large batch and store it in an airtight Tupperware container.

Gluten Free Pan Fried Chicken Ingredients: 3 boneless, skinless chicken breasts 1/4 C sweet rice flour 1/4 C brown rice flour 1/2 tsp salt 1/4 tsp pepper 1/2 tsp garlic powder 1/2 tsp onion powder Directions: Combine flours, salt, pepper, garlic powder, and onion powder.  Place on plate or bowl. One by one coat the chicken breasts with flour mixture.  Set aside on plate. In pan, heat 1- 1 2/2 inches of oil until it sizzles when sprinkled with water.
