Favorite Ingredient Friday: Popcorn Chicken

I was requested to post the recipe for the popcorn chicken that I listed on my menu for Menu Plan Monday. So here it is (this is for 2-3 people): 2-3 Raw, Chopped Chicken Breasts (can use other cuts if you prefer) 1/2 C bread crumbs (for gluten free – use crushed gf tortilla chips) 1 tsp Italian seasoning 1/4 C grated Parmesan cheese Put ingredients in Ziploc baggy and toss until coated. Since a more concrete recipe for my spaghetti sauce was requested… Here’s a rough estimate of what my recipe looks like: Ingredients: 2 can tomato sauce/paste1 can diced tomatoes1 onion1 green pepper2 cloves of garlicItalian seasoning, salt, pepper to taste2 Tbsp brown sugar Directions: 1. This is a really easy dish that’s sure to please even a picky eater. Have them pick out their favorite pasta shapes to make the dish even more fun. Once again, I usually make extra of this to freeze for later. I don’t use measurements on this dish as it varies according to meal/family size. Frozen Assets — Mashed Potatoes

We love mashed potatoes around our house, and I don’t really care to make them from scratch every time we want them. BUT, I prefer homemade (plus they’re really inexpensive to make). So, once again, I go back to my freezer. I peel, cook, and mash between 5 and 10 lbs of potatoes at a time. Then, I put them in microwave safe freezer containers (Tupperware Rock ‘n Serve).
