We love mashed potatoes around our house, and I don’t really care to make them from scratch every time we want them. BUT, I prefer homemade (plus they’re really inexpensive to make). So, once again, I go back to my freezer. I peel, cook, and mash between 5 and 10 lbs of potatoes at a time. Then, I put them in microwave safe freezer containers (Tupperware Rock ‘n Serve). I have mashed potatoes easily available at all times. Yum!! Loaded mashed potatoes also make a really great lunch for Little Song Bird and I. D, on the other hand, needs a more substantial meal.
