OAMC – Wrap Up

Posted in Gluten Free, and Homemaking

I’d love to say that I got all of my Once A Month Cooking done as planned, but things changed ~ adjustments were made.  The main thing is that we have a freezer with lots of good eats, and we ate well during the process. I learned that I only do true once a month cooking on a few meals.  I lean towards doing once a month prep work and freezer cooking (making double/triple batches of things as I go along).  Several of our regular meals are dump in the crockpot type meals, so getting the prep work done is…

Frozen Assets — Mashed Potatoes

Posted in Gluten Free, and Homemaking

We love mashed potatoes around our house, and I don’t really care to make them from scratch every time we want them. BUT, I prefer homemade (plus they’re really inexpensive to make). So, once again, I go back to my freezer. I peel, cook, and mash between 5 and 10 lbs of potatoes at a time. Then, I put them in microwave safe freezer containers (Tupperware Rock ‘n Serve). I have mashed potatoes easily available at all times. Yum!! Loaded mashed potatoes also make a really great lunch for Little Song Bird and I. D, on the other hand, needs…
