Frozen Assets: Calzones

These calzones can be made ahead of time and individually frozen. If you do not want to make your own bread for the calzones, just use some frozen bread dough from the store.

Ingredients:

2 Tbsp yeast
2 C warm water
5 C flour
2 C corn meal
2 Tbsp
5 Tbsp olive oil

Recipe:
1. Dissolve yeast in warm water until foamy.
2. Stir in flour, corn meal, salt, and olive oil.
3. Let rise 1 hour
4. Divide into 12 equal balls and flatten into 12 8-inch rounds
5. Put filling in rounds and fold in half
6. Pinch edges to seal
7. Prick tops several times with fork.
8. Sprinkle corn meal on cookie sheet
9. Bake at 425 F for 18-20 minutes.
10. Serve or cool and individually wrap and freeze

Fillings ideas:

1. Spaghetti sauce & mozzarella cheese
2. Spaghetti sauce, mozzarella cheese, & pepperoni
3. Sliced ham with cheese
4. Chopped chicken, broccoli, & cheese
