Munchkin really likes spaghetti and meatballs.  Add some cheesy garlic bread — well, then she’s just as happy as can be.  When I presented her with her with this platter, she just grinned and couldn’t wait to eat. Ingredients: 1 lb. ground turkey/chicken 2 Tbsp brown sugar 1/4 C gf rolled oats 3 Tbsp dried diced onion (or small fresh onion finely diced) 1 tsp dried oregano 1/2 tsp garlic powder 1-2 Tbsp ground flaxseed meal Directions: Preheat oven to 350 degrees Combine all ingredients until thoroughly mixed Roll into golf ball sized balls and placed in baking dish Cook…

Christmas can be dangerous for me because I really enjoy baking, and I also enjoy eating those baked goods.  Yesterday, Munchkin needed some cookies to take with her to her Awana Christmas party.  Since I was busy working on several other projects, I cheated and used a Betty Crocker Gluten Free chocolate chip cookie mix that I had on hand.  I tossed in some M&Ms to make it more festive and sprinkled some colored sugar on top.  I turned these into quite large cookies by using ice cream scoop sized balls of dough.  While I usually cook from scratch, it’s…

Crockpot Cooking

My new crockpot with various size crocks makes cooking much easier.  During the school week (and even on weekends), I enjoy the freedom of being able to toss some ingredients in the crockpot and forget about it until supper time. The aroma of a hot meal fills the house without me having to spend hours in the kitchen.  On days when I’m not feeling well, I’m still able to offer filling hot meals to my family. Munchkin has started back up with her home economics which means yummy good eats for us. One new thing that has been added to her studies is meal planning and nutrition.
