Christmas can be dangerous for me because I really enjoy baking, and I also enjoy eating those baked goods. Yesterday, Munchkin needed some cookies to take with her to her Awana Christmas party. Since I was busy working on several other projects, I cheated and used a Betty Crocker Gluten Free chocolate chip cookie mix that I had on hand. I tossed in some M&Ms to make it more festive and sprinkled some colored sugar on top. I turned these into quite large cookies by using ice cream scoop sized balls of dough. While I usually cook from scratch, it’s nice to be able to pull out a boxed mix sometimes. **grin** The great thing about these cookies is that no one could even tell that they were gluten free. D was happy that there were a few cookies left over for him as he really enjoys fresh baked cookies.
Normally, we make peanut butter balls around here (you won’t hear this Michigander call it a buckeye — just sayin’), but we haven’t made them yet this year. Another favorite any time of the year is my gluten free oatmeal cookies. I use various dried fruits instead of just using raisins to add a different depth of flavor to the cookies. We usually throw in some gluten free peanut butter cookies. Sometimes, we’ll add a chocolate kiss on top or maybe even a Dove chocolate that we purchased on clearance after one of the holidays.
While D is off work for the holidays (or on the weekend), we might have gluten free German Apple Puff pancakes or gluten free coffee cake. Both get eaten up very quickly. For the coffee cake, I usually at least double the batch.
Did I mention that I really like to bake? For Christmas Day, we will have a birthday cake for Jesus. Munchkin wants to have a gluten free marble cake with peanut butter buttercream frosting. We may just make some cupcakes this year. We’ll have to see how time goes.
This year, we’ll also be tackling some homemade peanut brittle since we have a great place locally to get delicious peanuts. I saw some peanut butter fudge over at Lamp Unto My Feet that I want to try. I don’t know if they’ll be enough time to try them all, but who says we have to stop when Christmas is over. lol!
