When we first went gluten free, I wanted to create some cookie recipes that didn’t require a lot of ingredients and were easy to make. Mixing up a bunch of flours to create the perfect flour blend was rather overwhelming. I wanted to be able to quickly put together cookies like before we were gluten free. These flourless peanut butter cookies fit the bill as they only required 4 ingredients that I always had on hand.
It’s important that you don’t overbake these cookies as they will get dry and crumbly. If you use natural peanut butter, you may find that you need to add a little extra oil. I like to use salted peanut butter, but you can use unsalted peanut butter and just add a little salt to the mix.
Start off by placing the sugar and baking powder in a bowl and combine thoroughly. If you’re using unsalted peanut butter, you’ll add a pinch of salt.
In a separate bowl, combine the peanut butter with the egg.
Slowly add the sugar mixture to the peanut butter mixture. Cream them together until the dough is smooth. Form heaping tablespoons of dough into balls and flatten slightly. Place on a parchment paper lined cookie sheet. Use a fork to make a criss-cross pattern on the cookies.
Bake for 10-12 minutes at 350 degrees. Remove from oven and allow to cool on the cookie sheet. They will be puffy and slightly moist when you remove them from the oven. They will continue to cook a little while on the hot cookie sheet. As they cool, they will drop slightly and no longer look moist on top.
You want to allow these to cool completely before eating. Once they’ve cooled, you can serve them or store them in an airtight container.
Ingredients
- 1 Cup Peanut Butter, salted (crunchy or creamy is fine)
- 1 Cup Sugar
- 1 Egg
- 1 tsp baking powder
Instructions
- Cream together the ingredients until smooth.
- Place heaping tbsps of dough about 2 inches apart on baking sheets. (optional: roll in sugar & make criss-cross marks with fork)
- Bake for 10-12 minutes at 350 degrees.
- Allow to cool for a few minutes on baking sheet before moving to a cooling rack
