Hamburger or Hot Dog Buns (Gluten-Free) Ingredients: 3/4 C Rice Flour1/4 C Potato Starch1/2 C Tapioca Starch2 tsp baking powder1 tsp xanthan gum1/2 tsp salt1 Tbsp sugar2 Eggs1/3 C Oil1/2 C milk Directions: 1. Preheat oven to 400 degrees. Mix dry ingredients in one bowl and wet ingredients in another bowl.2. Mix wet ingredients with dry ingredients. Spray cookie sheet with pam. GF Breakfast Bars

As you can see, this was a big hit with D. I needed a different idea for something for breakfast. I decided to use a play off of baked oatmeal. I used the Bob’s Red Mill Mighty Tasty GF Hot Cereal instead of oatmeal. Ingredients: 1/2 C butter, melted1 C brown sugar3 C Mighty Tasty GF Hot Cereal (or oatmeal)1 1/2 C milk w/2 tsp lemon juice (or yogurt or buttermilk)1 tsp cinnamon2 eggs, beaten2 tsp baking powder1 tsp saltOptional: raisins, nuts, chopped apples… Directions:1. As sandwiches and toast are a big part of our daily diet, I needed to find an alternative that was gluten-free. We didn’t want to sacrifice texture and flavor. This recipe found over at recipezaar fit the bill. I decided to put it in the bread machine at the gluten-free setting instead of baking it in the oven. Strawberry Pie

I started out with 2 buckets of strawberries and ended up with this nice, large bowl of strawberries. Some have been frozen for use later. Some have been eaten. Some were turned into 2 yummy strawberry pies! The key to this strawberry pie recipe is patience before eating as it really does need to set for a few hours at least (overnight is even better).
