I started out with 2 buckets of strawberries and ended up with this nice, large bowl of strawberries. Some have been frozen for use later. Some have been eaten. Some were turned into 2 yummy strawberry pies!
The key to this strawberry pie recipe is patience before eating as it really does need to set for a few hours at least (overnight is even better). Since this was the first time using this recipe (and making strawberry pie), I followed the directions exactly.
Strawberry Pie
Ingredients:
2 1/2 C water
2 C white sugar
5 Tbsp cornstarch
1 small pk strawberry gelatin
2 quarts strawberries, hulled
2 9 inch pie shells, baked
I decided to slice the strawberries instead of leaving them whole.
Directions:
1. Combine sugar and cornstarch in small bowl.
2. In a saucepan, combine water and sugar mixture. Cook over medium high heat, stirring constantly until mixture boils and thickens. Remove from heat and stir in the strawberry gelatin. Allow to cool slightly.
3. Arrange strawberries in the pie crusts with the tips pointing up (or just add lots of sliced berries to the crusts). Pour gelatin mixture over strawberries, covering the berries.
4. Place in refrigerator to set.
5. Serve with whipped cream.
