Make It From Scratch Carnival: Spaghetti Sauce & Biscuits

My make it from scratch entry this week is spaghetti sauce and biscuits. I’m posting my entry early, since I won’t be able to post it before Monday if I wait until the weekend.

I make spaghetti sauce from scratch on a regular basis. My family doesn’t really care for the store bought any more as we’re all use to the homemade stuff. Now, the problem that I’ve been running into lately is that the canned tomatoes have been having a very bitter flavor which leads to a yucky sauce. Now that I know what brands to say away from, we should be ok. I just need to keep an eye out for good sales. I hope to can my own tomatoes for next year. We’ll be trying out square foot gardening at our new home. I would love to share a recipe, but I tend to just add a bit of this and that. My basic ingredients are tomato paste/sauce, diced tomatoes, sautéed garlic, onions, and peppers, brown sugar and Italian seasonings.

Now, this week, I tried my hand at making biscuits from scratch and they were a hit. Only, I cheated. I didn’t roll out the dough and cut the biscuits; I just put the dough in muffin tins. I would post a picture, but they’re all gone. These are definitely something that I’ll be making again.

Biscuit Recipe

Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon white sugar
1/3 cup shortening (I used butter instead)
1 cup milk
Directions

1. Preheat oven to 425 degrees F (220 degrees C).
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.
3. Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.
4. Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

Like I said, I skipped step 3 and place the dough in greased muffin tins. Yum!!

    Your sauce sounds yummy, you can’t go wrong with sauted garlic, onions and peppers! I love the idea of making biscuits in muffin tins!!

    I shy away from homemade biscuits too. I haven’t found a recipe I was happy with. I need to try this one! 🙂

    Oh but I NEED a recipe for spaghetti sauce!!! This is something I plan on learning this year!! Any hints on where to get started? I don’t even know where to look for a recipe. And I would love to know how to do it with FRESH tomatoes instead of canned. And I would love to know what types you found to avoid and what you think works well as far as canned.

    We too are going to try SFG this year. I looked at the old book and it scared me. The NEW SFG looks so much easier!!! I even created a lesson plan based on the new book, modified from the Training Our Daughters To Be Keepers At Home book. I plan on posting it to my site when the weather gets warmer.
