Blueberry Freezer Jam Ingredients: 2 cups crushed blueberries (approximately 2 pints whole) 2 Tbsp. lemon juice 4 cups sugar 1 pouch (3 oz) certo liquid pectin Directions: Wash and rinse containers for jam. Wash and crush berries, one cup at a time. Place 2 cups berries in bowl and stir in 4 cups sugar. Mix well. Let stand for 10 minutes. Stir occasionally. Stir pectin into lemon juice in different bowl. Stir pectin mixture into berry mixture. Stir constantly until all sugar is dissolved. Pour into prepared containers. Chocolate Peanut Butter Pretzel Bites Ingredients: 1 package caramels 1/4 C butter, cubed 2 Tbsp water 5 C gf minature pretzels 1 jar (18 oz) peanut butter 26 oz milk chocolate candy coating Directions: In a microwave safe bowl, melt caramels with butter and water; stir until smooth Spread one side of the pretzel with 1 tsp peanut butter; top with 1/2 tsp caramel mixture Place on waxed paper-lined baking sheet; refrigerate until set In a microwave safe bowl, melt candy coating. Munchkin has really missed chicken nuggets, so I needed to find a fast, easy recipe to satisfy her craving… Ingredients:6 oz of your favorite tortilla chips (zesty is good for more flavor)1/2 C grated Parmesan cheese1 egg1 1/2 lbs of skinless, boneless chicken (cut into pieces) Directions: 1. Growing up, my mom would make us this delicious meal. She never had a recipe, so I had to go hunting for something that was similar to her recipe. With a little tweaking, I turned that recipe into a yummy gluten free treat.
