This is a really easy dish that’s sure to please even a picky eater. Have them pick out their favorite pasta shapes to make the dish even more fun. Once again, I usually make extra of this to freeze for later. I don’t use measurements on this dish as it varies according to meal/family size. Frozen Assets — Mashed Potatoes

We love mashed potatoes around our house, and I don’t really care to make them from scratch every time we want them. BUT, I prefer homemade (plus they’re really inexpensive to make). So, once again, I go back to my freezer. I peel, cook, and mash between 5 and 10 lbs of potatoes at a time. Then, I put them in microwave safe freezer containers (Tupperware Rock ‘n Serve).
