Gluten Free Banana Bread or Muffins
Ingredients
Wet Ingredients:
- 6 very ripe bananas
- 2 C white sugar
- 1 C brown sugar
- 3/4 C oil
- 3 tsp vanilla extract
- 1 tsp almond extract
- 6 eggs
Dry Ingredients:
- 2 1/4 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/4 C brown rice flour
- 1 1/4 C amaranth flour
- 1 1/4 C sorghum flour
- 3/4 tsp salt
Directions
1. Combine wet ingredients thoroughly.
2. In different bowl combine dry ingredients.
3. Combine wet and dry ingredients until mixed well.
4. Bake at 350 degrees for 25-35 minutes for regular muffins or large muffins, 40-50 minutes for loaf bread
These freeze well, so you may want to double or triple the batch.
