For Valentine’s Day, I wanted to have a special dessert, but I didn’t have the time to bake anything that day.  I thought it would be fun to have some chocolate covered strawberries.  We’ve had store purchased chocolate covered strawberries before, but they’re rarely very good plus they are usually quite expensive.  We had to stop and get milk at the grocery store, so we picked up a container of strawberries for $2.50.

I placed about 1 cup of chocolate chips and 1 Tbsp of coconut oil in a microwave safe bowl.  I microwaved at 30 second intervals, stirring after each interval until the chocolate was smooth.  Each strawberry was dipped in the chocolate and place on the tray.  (Don’t do like I did and forget the wax paper.)  I placed them in the fridge to set.

  1. Heather–I keep hearing good things about coconut oil–but using that w/the chocolate surprised me. It sounds like that would make it smoother, though. What brand of coconut oil do you use? Where can I get it?

    • I have used both Tropical Traditions and Nutiva. Tropical Traditions is available at their website (referral id = 5905631). Nutiva can be found at local grocery stores or online at Amazon. There are different opinions on which coconut oil is best. It’s one of those things where you will need to try some and see which you prefer. Some taste more like coconut than others.

      The oil in the chocolate does make is smoother. I started doing this when I was making peanut butter balls. Now, I do it whenever I melt chocolate chips for dipping purposes.
