Gluten Free Peanut Butter Chocolate Cookies
For Munchkin’s homeschool Valentine’s party, I happily agreed to make the cookies. Because it was a Valentine’s Day theme, I wanted to make sure I transformed the regular flourless peanut butter thumbprint cookies into something a little more special.
I mixed together 2 cups of sugar, 2 tsps baking powder, 2 cups of peanut butter, and 2 eggs until thoroughly combined. I then took about a tablespoon of the dough and rolled it into a ball. The dough ball was rolled in pink sugar crystals. I then flattened the balls and shaped them into hearts. I baked them for 10-12 minutes at 350 degrees F. Immediately upon removing them from the oven, I pressed the Dove chocolate hearts into the center of the heart cookie. I allowed the cookies to cool for 5 minutes on the cookie sheet, and then cooled them completely on a cookie rack. This gave me 2 dozen cookies.
The kids loved these cookies as did the adults. No one knew they were gluten free until I told them. While they know that we’re gluten free, they didn’t think about the fact that I would be bringing gluten free baked goods to the party.
