When you have lots of veggies available, you tend to add veggies to pretty much everything that you’re making. On Monday night, I made a marinara meat sauce that was loaded with veggies and served it over pasta. Chicken salad is a nice light meal during the summer. You can add in veggies or fruit to give a little extra punch of flavor. Since we had some sweet cherries from our Bountiful Baskets order, I decided that I would make a nice sweet cherry chicken salad for our lunch. Roasted Cauliflower and Broccoli

Today, I picked up our Bountiful Baskets order, and I have to say that the organic baskets were wonderful this week. We received broccoli, cauliflower, cherries, mangoes, donut peaches, mushrooms, corn, purple kale, baby bok choy, celery, and cantaloupe. I also got a box of pineapple. Chicken with Cranberry Blueberry Sauce

What do you do when you have some extra blueberry and cranberries that need to be used up? Well, I decided to create a raw sauce for our pan grilled skinless, boneless chicken breasts. After eating it, both D and I decided that it would also taste great on ice cream, so we used some of the leftover sauce on some homemade vanilla blender ice cream later that evening. Yum! I just love it when you can make one main item and use it for multiple meals just by adding some different sides. In the case of these organic sirloin steaks, I sliced them up thin and made the meat stretch. We were able to use them for 3 different meals.
