Gluten Free Sweet Cherry Chicken Salad

Chicken salad is a nice light meal during the summer. You can add in veggies or fruit to give a little extra punch of flavor. Since we had some sweet cherries from our Bountiful Baskets order, I decided that I would make a nice sweet cherry chicken salad for our lunch.

Ingredients:

  • 3 cups chopped chicken (use leftover chicken or chicken from a can, whichever you prefer)
  • 1/4 cup diced sweet onion
  • 1/4 cup chopped celery (I like to include some celery leaves)
  • 1/3 cup chopped sweet cherries (use more if you want a more prominent cherry flavor)
  • 1/3 cup mayo (use a little more or less depending on how creamy you want your chicken salad)
  • 1 tsp dijon mustard (I used blackcurrent dijon mustard)
  • salt
  • pepper
  • garlic powder

Directions:

  1. In a medium bowl, combine the mayo, dijon mustard, salt, pepper, and a hint of garlic powder.
  2. Add the chicken to the mayo mixture and stir to completely coat the chicken.
  3. Stir in the celery, onion, and sweet cherries.
  4. Cover bowl and refrigerate until it’s time to eat.
  5. Serve by itself, with gluten free crackers, or in a sandwich.

Notes:

I like to make this ahead of time as it allows the flavors to come together more, but you can eat it immediately after making it if desired.
