Chicken salad is a nice light meal during the summer. You can add in veggies or fruit to give a little extra punch of flavor. Since we had some sweet cherries from our Bountiful Baskets order, I decided that I would make a nice sweet cherry chicken salad for our lunch.
Ingredients:
- 3 cups chopped chicken (use leftover chicken or chicken from a can, whichever you prefer)
- 1/4 cup diced sweet onion
- 1/4 cup chopped celery (I like to include some celery leaves)
- 1/3 cup chopped sweet cherries (use more if you want a more prominent cherry flavor)
- 1/3 cup mayo (use a little more or less depending on how creamy you want your chicken salad)
- 1 tsp dijon mustard (I used blackcurrent dijon mustard)
- salt
- pepper
- garlic powder
Directions:
- In a medium bowl, combine the mayo, dijon mustard, salt, pepper, and a hint of garlic powder.
- Add the chicken to the mayo mixture and stir to completely coat the chicken.
- Stir in the celery, onion, and sweet cherries.
- Cover bowl and refrigerate until it’s time to eat.
- Serve by itself, with gluten free crackers, or in a sandwich.
Notes:
I like to make this ahead of time as it allows the flavors to come together more, but you can eat it immediately after making it if desired.
