Sweet Cherry Chicken Salad
 
 
This naturally gluten free chicken salad features seasonal sweet cherries for a light summer lunch. It can be made ahead for picnic lunches or doubled/tripled for fun potlucks.

Ingredients
  • 3 cups chopped chicken (use leftover chicken or chicken from a can, whichever you prefer)
  • ¼ cup diced sweet onion
  • ¼ cup chopped celery (I like to include some celery leaves)
  • ⅓ cup chopped sweet cherries (use more if you want a more prominent cherry flavor)
  • ⅓ cup mayo (use a little more or less depending on how creamy you want your chicken salad)
  • 1 tsp dijon mustard (I used blackcurrent dijon mustard)
  • salt
  • pepper
  • garlic powder
Instructions
  1. In a medium bowl, combine the mayo, dijon mustard, salt, pepper, and a hint of garlic powder.
  2. Add the chicken to the mayo mixture and stir to completely coat the chicken.
  3. Stir in the celery, onion, and sweet cherries.
  4. Cover bowl and refrigerate until it's time to eat.
