I love these naturally gluten free Parmesan cheese chips. They are easy to make and taste great with veggies, served with soup, or even pasta. Parmesan Cheese Chips These are relatively easy to make, but you really need to keep an eye on them during the baking process so they do not burn. For a sharper crisp, used an aged Parmesan cheese. Gluten Free Veggie Pasta

When you have lots of veggies available, you tend to add veggies to pretty much everything that you’re making. On Monday night, I made a marinara meat sauce that was loaded with veggies and served it over pasta. Since the fridge and freezer were looking pretty empty (except for the veggies), we had pasta again last night. This time, I just made a nice veggie pasta with no marinara sauce. Sweet Cherry Chicken Salad

Chicken salad is a nice light meal during the summer. You can add in veggies or fruit to give a little extra punch of flavor. Since we had some sweet cherries from our Bountiful Baskets order, I decided that I would make a nice sweet cherry chicken salad for our lunch. Roasted Baby Bok Choy

As you can see, I’m working my way through our Bountiful Baskets veggies. I had never cooked or eaten baby bok choy, so I wasn’t sure what exactly to do with it. Roasted Cauliflower and Broccoli

Today, I picked up our Bountiful Baskets order, and I have to say that the organic baskets were wonderful this week. We received broccoli, cauliflower, cherries, mangoes, donut peaches, mushrooms, corn, purple kale, baby bok choy, celery, and cantaloupe. I also got a box of pineapple.
