Cinnamon rolls (from a can) were a regular part of our weekend breakfast menu before we switched to a gluten free diet, and Munchkin has dearly missed those cinnamon rolls. Christmas can be dangerous for me because I really enjoy baking, and I also enjoy eating those baked goods.  Yesterday, Munchkin needed some cookies to take with her to her Awana Christmas party.  Since I was busy working on several other projects, I cheated and used a Betty Crocker Gluten Free chocolate chip cookie mix that I had on hand.  I tossed in some M&Ms to make it more festive and sprinkled some colored sugar on top.  I turned these into quite large cookies by using ice cream scoop sized balls of dough.  While I usually cook from scratch, it’s…

Oatmeal Cookies   Ingredients: 3/4 C butter, softened 3/4 C white sugar 3/4 C packed light brown sugar 2 eggs 1 tsp vanilla extract 1 1/4 gluten free flour 1 tsp baking soda 3/4 tsp cinnamon 1/2 tsp salt 2 3/4 C gluten free rolled oats 1 C raisins or other dried fruit Directions: 1. Blueberry Freezer Jam Ingredients: 2 cups crushed blueberries (approximately 2 pints whole) 2 Tbsp. lemon juice 4 cups sugar 1 pouch (3 oz) certo liquid pectin Directions: Wash and rinse containers for jam. Wash and crush berries, one cup at a time. Place 2 cups berries in bowl and stir in 4 cups sugar. Mix well. Let stand for 10 minutes. Stir occasionally. Stir pectin into lemon juice in different bowl. Stir pectin mixture into berry mixture. Stir constantly until all sugar is dissolved. Pour into prepared containers. Chocolate Peanut Butter Pretzel Bites Ingredients: 1 package caramels 1/4 C butter, cubed 2 Tbsp water 5 C gf minature pretzels 1 jar (18 oz) peanut butter 26 oz milk chocolate candy coating Directions: In a microwave safe bowl, melt caramels with butter and water; stir until smooth Spread one side of the pretzel with 1 tsp peanut butter; top with 1/2 tsp caramel mixture Place on waxed paper-lined baking sheet; refrigerate until set In a microwave safe bowl, melt candy coating.
