Gluten Free Strawberry Pie Ingredients: 2 1/2 C water 2 C white sugar 5 Tbsp gluten free cornstarch 1 small pk strawberry gelatin 2 quarts strawberries, sliced 2 9 inch gluten free pie crusts, baked Directions: Thoroughly combine sugar and cornstarch in small bowl. In a saucepan, combine water and sugar mixture. Cook over medium high heat, stirring constantly until mixture boils and thickens. Remove from heat and stir in the strawberry gelatin. My March Once A Month Cooking (OAMC) has begun.  I do mine a little differently than many people.  I tend to get things done over a series of several days. What I’ve done so far: 25 lbs of boneless, skinless chicken breasts have been vacuum sealed and placed in freezer.  (half with seasoning, half without) 10 lbs of ground turkey have been divided into 1 lb vacuum sealed packages and placed in freezer.  (still need to purchase more ground turkey) 5 quart sized bags of gluten free blueberry granola have been made (based on OAMM Crystal’s Lazy Granola recipe) 2…

My recipe for a semi-homemade version of gluten free buttermilk drop biscuits. This is my easy go-to biscuit base when I don’t feel like mixing up various flours. Ingredients: 2 Cups Pamela’s Baking Mix 1 Stick of butter 2/3 Cup buttermilk Directions: Cut butter into baking mix until thoroughly combine; pea sized pieces of butter Add buttermilk and mix until thoroughly combine. Drop biscuits onto cookie sheet Bake at 375 degrees F for 12 minutes. Allow biscuits to cool slightly before frosting. Serve warm or cold. Heart Shaped Peanut Butter Chocolate Cookies

Gluten Free Peanut Butter Chocolate Cookies For Munchkin’s homeschool Valentine’s party, I happily agreed to make the cookies.  Because it was a Valentine’s Day theme, I wanted to make sure I transformed the regular flourless peanut butter thumbprint cookies into something a little more special. I mixed together 2 cups of sugar, 2 tsps baking powder, 2 cups of peanut butter, and 2 eggs until thoroughly combined.  I then took about a tablespoon of the dough and rolled it into a ball.  The dough ball was rolled in pink sugar crystals.  I then flattened the balls and shaped them into…
