Thursday: This and That

Posted in Family, Homemaking, Homeschooling, and Thoughts

I know that I haven’t been blogging much this week other than recipes and reviews/giveaways.  It’s been a busy week.  Plus, we’ve been enjoying the beautiful weather.  We’re taking advantage of these warm days before the summer heat sets in.  I’ve been spending less time on the computer and more time doing other things.  I just needed a bit of a break.  Soon enough, we’ll be hibernating for the summer. I’ve been happily baking, cooking, and creating new recipes. I had forgotten how relaxing it is to be in the kitchen just creating and having fun.  All too soon, it…

Gluten Free Soft Drop Sugar Cookies

Posted in Gluten Free, and Homemaking

I admit that cookies are my weakness, so it was hard when we went gluten free as I had to learn how to bake all my favorite cookies all over again. Baking with Wilton Giveaway

Posted in Homemaking, and Reviews

I grew up baking with Wilton products as that is what my mom always had for me to use.  I now have my mom’s Wilton cake pans and decorating tips along with ones that I’ve purchased myself.  Munchkin is growing up using Wilton products and will one day have her own Wilton set.  When I received the opportunity to try out some different Wilton baking/cooking products, I was thrilled.  Knowing that I cook and bake gluten free, I was sent the Cyclone wisk, the Pastry Blender, the Cake Lifter, and the Baker’s Blade. The Cake Lifter was by far my…

I like to use coconut oil in my baking and cooking.  I even use it for my skin.  I was thrilled when I was given the opportunity to try out Tropical Traditions Gold Label Virgin Coconut Oil. The Gold Label Virgin Coconut Oil is an unrefined, cold pressed coconut oil.  It is processed the old fashioned, traditional way by families in the Philippines.  It has a smooth, light texture with a hint of coconut flavor. Coconut oil has a long shelf-life without having to have any yucky preservatives.  It is an interesting oil due to the fact that it is…

Gluten Free Lazy Granola Ingredients: 1 C brown sugar 1 C coconut oil 1 C honey 2 Tbsp cinnamon (we like cinnamon, so you may want to reduce this) 3 tsp vanilla extract 1 tsp almond extract 13 C gluten free oats 2-3 C dried fruit (optional) 1-2 C nuts (optional) Directions: Mix brown sugar, oil, and honey in a small saucepan being to a low boil.  Once boiling, remove from heat.
