Peanut Butter Oatmeal Bars Ingredients: 1 cup gluten-free flour 1 cup gluten free oats 2/3 cup brown sugar 1/4 teaspoon baking soda 1/2 cup butter 1 cup peanut butter Directions: In a mixing bowl combine gluten free flour, gluten free oats, brown sugar and baking soda. Cut in butter till mixture resembles coarse crumbs. Reserve 1 cup of the flour mixture. Press remaining flour mixture into the bottom of an ungreased 8×8 pan. Spread with peanut butter. Gluten Free Soft, Chewy Chocolate Chip Cookies Ingredients: 1/2 C butter, softened 6 Tbsp cream cheese, softened 1/2 tsp pure vanilla 1/2 C sugar 1/2 C brown sugar 1 egg 1 1/2 C gluten free flour 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp xanthan gum 1 C chocolate chips 1/2 C chopped nuts (optional) Directions: Mix together gluten free flour, baking soda, baking powder, and xanthan gum.
