Gluten Free Cinnamon Peanut Butter Cookies

Posted in Gluten Free, and Homemaking

All you have to do is ask D or Munchkin to know that I sometimes try some crazy things in the kitchen.  I like to play with my food. **grin**  Today, I decided to make some flourless peanut butter cookies, but I wanted to try something slightly different.  The end result was some delicious, chewy, spicy peanut butter cookies. Gluten Free Cinnamon Peanut Butter Cookie Recipe Ingredients: 2 cups peanut butter (smooth or crunchy) 1 1/2 cups sugar 1/2 cup brown sugar 2 tsp baking soda 2 eggs 1 tsp cinnamon (use less if you want a less spicy flavor)…

Gluten Free Multi-Grain Cinnamon Rolls

Posted in Gluten Free, and Homemaking

I surprised both D and Munchkin today with a delicious pan of gluten free cinnamon rolls.  These are a special treat because I don’t make them that often.  D asked me to try to make some cinnamon rolls based upon my current multi-grain sandwich bread recipe as he really likes that bread.  I tweaked things a little and came up with this recipe.  It was a hit, and it wasn’t that difficult to make. Gluten Free Multi-Grain Cinnamon Rolls Recipe Dough Ingredients: 1/4 C Teff flour 1/4 C Brown Rice flour 1/4 C Amaranth flour 3/4 C Potato starch 1…

More Thanksgiving Baking for Munchkin

Today, Munchkin tackled making gluten free sweet potato muffins.  She decided to do a double batch since we like them so much.  The muffins turned out great.  Mmmm…. delicious! Munchkin is turning into quite the little baker.  I’m having so much fun teaching her how to bake and seeing her enjoyment as she accomplishes baking delicious treats.  She was grinning from ear to ear when Daddy promptly claimed all of the muffins because they were so good.  **grin**

Passing Skills to the Next Generation: Cooking

Posted in Homemaking, and Homeschooling

My butter cream frosting recipe was copied from my mom’s butter cream recipe.  My mom had copied that recipe from my grandfather’s recipe.  I made a slight change to the recipe (which I still need to note on the recipe card), and now, Munchkin will be copying the recipe from my recipe.  Munchkin will be the 4th generation to use the same basic recipe. I stood by my mom’s side as she taught me how to make butter cream frosting and then frost a cake.  She showed me some basic skills and then sent me off to practice on a…

Welcome to the Bakery

Munchkin wanted to work on her cake decorating skills, so we decided to ask her friend to join us.  This morning, Munchkin went with her friend and her family to see a movie while I baked some cakes and cupcakes and prepared the frosting for the cake decorating class. After lunch, the girls started working on some basic skills.  I covered some cardboard with aluminum foil to give them a space to practice using different decorating tips.  While they were practicing, they had fun taste testing the frosting.  Pretty soon, they decided that they had tasted enough frosting. **grin** While…
