Gluten Free Multi-Grain Cinnamon Rolls

I surprised both D and Munchkin today with a delicious pan of gluten free cinnamon rolls.  These are a special treat because I don’t make them that often.  D asked me to try to make some cinnamon rolls based upon my current multi-grain sandwich bread recipe as he really likes that bread.  I tweaked things a little and came up with this recipe.  It was a hit, and it wasn’t that difficult to make.

Cinnamon Rolls

Gluten Free Multi-Grain Cinnamon Rolls Recipe

Dough Ingredients:

  • 1/4 C Teff flour
  • 1/4 C Brown Rice flour
  • 1/4 C Amaranth flour
  • 3/4 C Potato starch
  • 1 C Tapioca starch
  • 1 Tbsp Xanthum gum
  • 1 tsp salt
  • 2 Tbsp sugar
  • 1-2 tsp cinnamon
  • 2 1/2 tsp bread yeast
  • 3 Tbsp olive or coconut oil
  • 1 C warm water
  • 1 egg (room temperature)
  • 1 egg white (room temperature)
  • sweet rice flour – set aside

Filling Ingredients:

  • 2-4 Tbsp. room temperature Butter
  • 1 C brown sugar
  • 1/2 C nuts (finely chopped) *optional
  • 1-2 Tbsp. cinnamon

Frosting Ingredients:

  • 2 Tbsp. softened cream cheese
  • 1/4 C milk (or heavy cream for more rich frosting)
  • 1 C powdered sugar
  • 1 tsp. vanilla

Directions:

  1. Sift and combine dry ingredients in large mixing bowl.
  2. Combine together wet ingredients.
  3. Turn on mixer and slowly add wet ingredients to dry ingredients. (You may need less water if you’re in a high humidity area.)
  4. Mix on medium speed for 2-3 minutes. Dough will be sticky.
  5. Dust work surface liberally with white rice flour.  Place dough on floured surface and sprinkle liberally with white rice flour.
  6. Work dough with hands/fingers (dust your hands with flour if the dough sticks) to create a large rectangle.
  7. Liberally cover dough with butter.
  8. Combine filling ingredients (minus butter) and sprinkle over buttered dough.
  9. Starting at one end of the dough, slowly roll the dough into a “log”.  Cut dough into 1 – 1 1/2 inch slices.
  10. Place rolls in baking pan/dish.  Cover the rolls loosely and allow to rise for about an hour.
  11. Preheat oven to 375 degrees F. Place uncovered buns in the oven and bake for 20-25 minutes. (The tops of the rolls will be slightly golden.)
  12. Mix together the frosting ingredients (slowly add milk/cream until you reach consistency you desire) and spoon over warm rolls.  Serve and enjoy.

  1. Those look really good. We have the tradition of eating cinnamon rolls on Christmas morning, most years I am too lazy to make them from scratch though.
