This is my semi-homemade version of gluten free cinnamon raisin biscuits.  Sometimes it’s nice to be able to use a mix when making gluten free baked goods.

Ingredients:

  • 2 Cups Pamela’s Baking Mix
  • 1 Stick of butter
  • 2/3 Cup buttermilk
  • 1/2 tsp vanilla
  • 3 Tbsp brown sugar
  • 1-2 Tbsp cinnamon
  • 1/4 raisins (more if desired)
  • Frosting ~ powdered sugar, cream, vanilla

Directions:

  1. Cut butter into baking mix until thoroughly combine; pea sized pieces of butter
  2. Add buttermilk, vanilla, brown sugar, and cinnamon until thoroughly combined
  3. Stir in raisins; dough will be loose and moist
  4. Drop biscuits onto cookie sheet or form into shapes (like hearts)
  5. Bake at 375 degrees F for 12 minutes.
  6. While baking, make the frosting. Add a splash of vanilla to the powered sugar (roughly 1/4 C) and cream (roughly 1-2 Tbsp) to create your preferred frosting consistency.
  7. Allow biscuits to cool slightly before frosting.  Serve warm or cold.

  1. Looks delicious. I know a lot of people like Pamela’s baking mix. I’ve only used Pamela’s bread mix which I really like.

      I try to always have some on hand for when I don’t have time to mix flours (or don’t have the flours to mix). The Pamela’s bread mix is nice.
