Baking Day: Gluten Free Chocolate Cupcakes

Posted in Gluten Free, and Homemaking

When Munchkin is working on a recipe, I always encourage her to set out all of the ingredients that she will need prior to starting her baking/cooking.  This helps her read the instructions and allows her to check to make sure that she has everything that she needs prior to starting the whole process. Wednesday, she tackled making gluten free chocolate cupcakes from scratch.  She also make the homemade buttercream frosting from scratch.  She’s been getting much better at understanding and following the directions.  I’m really pleased with how the cupcakes turned out.  Yum! Gluten Free Multi-Grain Cinnamon Rolls

Posted in Gluten Free, and Homemaking

I surprised both D and Munchkin today with a delicious pan of gluten free cinnamon rolls.  These are a special treat because I don’t make them that often.  D asked me to try to make some cinnamon rolls based upon my current multi-grain sandwich bread recipe as he really likes that bread.  I tweaked things a little and came up with this recipe.  It was a hit, and it wasn’t that difficult to make. Gluten Free Multi-Grain Cinnamon Rolls Recipe Dough Ingredients: 1/4 C Teff flour 1/4 C Brown Rice flour 1/4 C Amaranth flour 3/4 C Potato starch 1…

Gluten Free Chocolate Whoopie Pies

Posted in Gluten Free, Homemaking, and Photography

After reading about all of the different whoopie pies people were making, I knew that I needed to dig out my grandfather’s recipe and try a gluten free version.  While the result isn’t perfect and doesn’t look quite like a traditional whoopie pie, it was delicious.  I had purchased some Jules Gluten Free Flour to try, so I used that in this recipe. Gluten Free Whoopie Pie Recipe Cake Ingredients: 2 large eggs 2/3 C butter 1 1/4 C sugar 1 C milk (I used vanilla almond milk) 2 1/2 C gluten free flour (I used Jules Gluten Free Flour…

We miss snow.  What can I say?  We’re actually a family of strange people who really enjoy snow.  Now, please keep in mind that we still very much like the mild winters here as we are able to do all kinds of outdoor activities without freezing. Since we won’t be having snow any time in the near future, we decided to make some gluten free snowy sugar cookies in addition to other frosted gluten free sugar cookies.  We just used my easy gluten free drop sugar cookie recipe for this batch.  We decided to use the multi-grain flour blend instead…

First Breadmaking Attempt: Herb Bread

Posted in Gluten Free, and Homemaking

Seeing how I’m still battling with a stomach bug, Munchkin decided that she would step up and help me get started on some of the Thanksgiving preparations.  Since we’re gluten free, part of the process is making bread for the express purpose of making stuffing/dressing.  The bread needs to sit and get a little stale prior to making the stuffing/dressing, so we needed to get started on the process today. Munchkin decided that she would like to learn how to make gluten free bread.  The nice thing about gluten free bread is that you don’t have to concern yourself with…
