Snowy Gluten Free Sugar Cookies

We miss snow.  What can I say?  We’re actually a family of strange people who really enjoy snow.  Now, please keep in mind that we still very much like the mild winters here as we are able to do all kinds of outdoor activities without freezing.

Since we won’t be having snow any time in the near future, we decided to make some gluten free snowy sugar cookies in addition to other frosted gluten free sugar cookies.  We just used my easy gluten free drop sugar cookie recipe for this batch.  We decided to use the multi-grain flour blend instead of the rice flour blend which resulted in a slightly different, but good flavor.  If your kids are picky about wanting white bread, using the mulit-grain blend is not a good idea.

I made a traditional royal icing with egg whites this time.  This is the first time that I’ve used egg whites to make it.  I was really pleased with the results.  Since the icing was a little sweeter than my normal buttercream frosting, I added a little bit of lemon and vanilla extract.

Royal Icing Recipe

Ingredients for Royal Icing:

  • 2 egg whites
  • 2 tsp real lemon
  • 3 cups powdered sugar
  • 2 drops lemon extract (optional)
  • 1/2 tsp vanilla extract (optional)

Directions:

  1. Whip egg whites, lemon, vanilla extract, and lemon extract in a cold bowl until soft peaks begin to form.
  2. Slowly add in the powdered sugar.
  3. Whip the mixture until stiff peaks form.
  4. At this point, you’ll have frosting that is excellent for piping, but not so good for spreading.
  5. Gradually add a little bit of water at a time until you reach your desired consistency.
  6. Mix in food coloring, if desired.

To make the snowy sugar cookies, I just spread some of the white royal icing on the sugar cookies and sprinkled them with coarse white sugar crystals.

After we made the snowy sugar cookies, we added some blue food coloring to the icing to make a pretty ice blue color.  Munchkin sprinkled the newly frosted cookies with red and green sugar.  Very pretty, very festive, and very yummy.

Baking sugar cookies is just one of the many ways that we’re able to have fun in the kitchen during the CHRISTmas season.  Unlike my mom, I do not spend lots of time rolling out and cutting the sugar cookies.  I just stick with easy drop cookies.  **grin**

  2. We’ve had snow on the ground since the week before Thanksgiving. Unusual for us to have it this long this time of year. That’s OK…we are snow people too. Not skiiers or snowboarders, just love the snow 🙂 The cookies look scrumptious!

  3. The cookies look good. We haven’t had any snow this year either. Last year we had over 30 inches in October (very unusual for us)
