When we first purchased our cabin, we had a lot of clean-up to do around the house and under the porch. While we were doing the clean-up, we discovered a lot of wood that was used during the building of the house. I’ve been seeing the idea of salads in a jar around the internet for some time now, but I never got around to really trying them until recently. A great abundance of produce from Bountiful Baskets combined with the craziness of the move lead me to dig deeper into the process. I wanted healthy, easy food for us while life was crazy. Grain Free Coconut Flour Tortillas

Our neighbor was looking for a recipe for grain free tortillas, so I decided to try to come up with something using coconut flour that would work. It doesn’t have that true tortilla feel as it has an egg base, but the flavor and texture work. It also rolls nicely as long as it is kept thin, but not too thin. It’s basically somewhere between a crepe and a pancake. D ended up taking a couple of these and using them as wraps for his turkey sausage. He said that the result was quite yummy. Baby Shower Onesie and Washcloth Cupcakes

It’s always a bummer when you can’t make it to special events for family members. D’s brother and his wife are expecting their first child, and they had their baby shower this past weekend. Seeing how they are on the other side of the country, we weren’t able to be there. I still wanted to make something special for them, so I put together these cupcakes (see my fuzzy sock cupcakes post for more details on these as well as a template for the cupcake wrappers) using a variety of baby items like onesies, sleepers, and washcloths.
