We’re still getting settled into the new place even though we’ve been here a little over a month now. I was on track to have the house completely unpacked and organized on record pace until we started volunteering at the horse rescue. For some reason, I was craving something pumpkin yesterday, so I decided to make some pumpkin muffins. Knowing that muffins make a quick and easy on-the-go breakfast, I went ahead and made a double batch, so I could freeze some for later. Now that we’re heading over to the ranch in the morning on most days of the week, I find that we need something fast and easy for breakfast. It’s hard to believe that we’ve been here for almost 2 weeks now. I admit that I was feeling rather frustrated at the lack of organic produce available in the area until a kind Walmart employee pointed me in the direction of a local produce market. I headed over there on Thursday afternoon and was pleasantly surprised. The place didn’t look like much from the outside, but the produce was beautiful.
